Avocado Chicken Salad Lettuce Wraps Recipe

A zesty, high-protein chicken salad made with Greek yogurt, extra virgin olive oil, and smoky harissa, served in crisp romaine lettuce boats and topped with diced fresh avocado and sliced red onion.

Ingredients
  

For the Zesty Chicken Salad Base:
  • - 2 cups cooked chicken breast shredded or diced rotisserie chicken
  • - 1/4 cup plain Greek yogurt
  • - 1 tbsp extra virgin olive oil EVOO
  • - 2 tbsp mild harissa paste or buffalo sauce / smoky paprika paste
  • - 1 tbsp fresh lemon juice
  • - 1/4 tsp garlic powder
  • - 1/2 tsp smoked paprika
  • - Salt and freshly ground black pepper to taste
For Assembly & Toppings:
  • - 1 head Romaine lettuce hearts leaves separated, washed, and dried thoroughly
  • - 1 ripe avocado pitted and diced
  • - 1/4 cup red onion thinly sliced
  • - 2 tbsp fresh flat-leaf parsley or cilantro finely chopped
  • - Pinch of smoked paprika or chili powder for garnish

Method
 

  1. In a medium mixing bowl, whisk together the Greek yogurt, extra virgin olive oil, harissa paste, lemon juice, garlic powder, smoked paprika, salt, and black pepper until smooth and fully emulsified.
  2. Add the shredded cooked chicken breast into the bowl and fold with a spatula until the chicken is thoroughly and evenly coated in the creamy sauce.
  3. Lay the washed and thoroughly dried romaine lettuce leaves flat on a platter or place them upright in a taco holder stand.
  4. Spoon a generous portion of the zesty chicken salad down the center rib of each romaine leaf.
  5. Top each wrap with diced avocado chunks and thinly sliced red onions.
  6. Sprinkle freshly chopped flat-leaf parsley (or cilantro) over the top, finish with a light dusting of smoked paprika, and serve immediately.

Notes

To prevent avocado from browning during meal prep, toss diced chunks in 1 tsp lemon juice before topping.
- Store chicken salad, toppings, and lettuce separately if prepping ahead. Assemble immediately before eating.
