Ingredients
Method
- Slice two of the hard-boiled eggs completely in half lengthways and set aside for the center slices. Roughly chop the remaining two hard-boiled eggs.
- In a medium bowl, combine the avocados, fresh lemon juice, Greek yogurt, sea salt, and black pepper. Mash with a fork until chunky yet spreadable.
- Gently fold the chopped eggs, diced red onion, chopped scallions, fresh parsley, and fresh dill into the mashed avocado mixture.
- Lay a whole wheat tortilla flat on a clean cutting board. Spread one-quarter of the avocado egg salad mixture across the middle, leaving a 1/2-inch border along the outer edges.
- Place two hard-boiled egg halves face-up along the center line. Lightly dust the egg halves with a pinch of smoked paprika and red chili flakes.
- Fold the sides inward slightly, then roll the tortilla up tightly into a clean log shape. Repeat for all four tortillas.
- Brush the exterior of each roll-up lightly with Extra Virgin Olive Oil.
- Heat a non-stick skillet over medium heat. Place roll-ups seam-side down first and sear for 1-2 minutes per side until golden brown and toasted.
- Transfer to a cutting board, slice in half or into pinwheel rounds, garnish with extra green onions and paprika, and serve warm.
Notes
- To keep avocados bright green during meal prep, ensure fresh lemon juice is mixed thoroughly into the mash.
