Baked Burrata with Roasted Cherry Tomatoes

Warm, velvety burrata cheese nestled in a sea of sweet, blistered roasted cherry tomatoes, garlic, and fresh basil. A 25-minute Mediterranean appetizer perfect for dipping crostini!

Ingredients
  

  • - 2 pints approx. 4 cups sweet cherry or grape tomatoes
  • - 1 ball 8 oz fresh burrata cheese, room temperature
  • - 3 tbsp extra virgin olive oil plus extra for finishing
  • - 3 cloves fresh garlic thinly sliced
  • - 1 tbsp balsamic vinegar
  • - 1 tbsp balsamic glaze for drizzling
  • - 1/2 tsp dried oregano
  • - 1/4 tsp crushed red pepper flakes
  • - 1/2 tsp kosher salt
  • - 1/4 tsp freshly cracked black pepper
  • - 1/2 cup fresh basil leaves torn
  • - 1 loaf crusty sourdough baguette or crostini sliced and toasted

Method
 

  1. Oven Prep:
  2. Preheat your oven to 400°F (200°C).
  3. Season Tomatoes:
  4. In an 8x8-inch baking dish or skillet, combine cherry tomatoes, sliced garlic, extra virgin olive oil, balsamic vinegar, dried oregano, red pepper flakes, kosher salt, and black pepper. Toss directly in the dish until tomatoes are coated.
  5. Roast:
  6. Place dish in the oven and bake for 20 minutes until tomatoes blister, collapse, and release their juices into a jammy sauce.
  7. Add Burrata:
  8. Remove dish from oven. Clear a central well by pushing tomatoes to the edges. Gently place the room-temperature burrata ball in the center.
  9. Warm Cheese:
  10. Return dish to oven and bake for 3 to 5 minutes until burrata is warm and soft to touch.
  11. Garnish & Serve:
  12. Remove from oven. Top with torn fresh basil, an extra drizzle of extra virgin olive oil, and a reduction of balsamic glaze. Serve immediately alongside toasted crusty bread.

Notes

- Cheese Temp: Always bring burrata to room temperature 30-40 minutes before baking to ensure an evenly warmed core.
- Water Content: Drain brine thoroughly and pat the burrata dry prior to placing it in the baking dish.
- Leftover Idea: Toss leftover roasted tomatoes and melted burrata with warm penne or rigatoni pasta for an instant meal!
