Method
- Preheat oven to 400°F (200°C). Generously grease a 24-count mini muffin pan with extra virgin olive oil or cooking spray.
- Grate zucchinis coarsely using a box grater. Place in a colander, toss with 1/2 tsp kosher salt, and rest for 10 minutes over the sink.
- Wrap grated zucchini tightly in a clean linen kitchen towel or cheesecloth. Squeeze firmly over the sink to remove all excess liquid until zucchini feels dry.
- In a large bowl, whisk the egg. Add squeezed dry zucchini, cheddar, Parmesan, feta, breadcrumbs (or almond flour), fresh parsley, garlic, onion powder, and black pepper. Stir well until uniformly combined.
- Spoon 1 tablespoon of mixture into each mini muffin cup. Press down firmly with the back of a spoon to pack ingredients tightly.
- Bake for 18 to 22 minutes until edges and tops are deep golden brown and crisp.
- Rest in pan for 5 minutes. Gently loosen edges with a butter knife and pop out. Serve warm with Greek tzatziki or garlic aioli.
Notes
- Air Fryer Method: Form mixture into small tater-tot patties. Cook in single layer at 375°F (190°C) for 12-15 minutes, flipping halfway.
- Freezing: Flash freeze baked bites on a sheet for 1 hour, then keep in freezer bags for up to 2 months. Reheat in oven or air fryer at 350°F for 5-7 mins.
