Ingredients

  • - 2 medium zucchinis approx. 3 cups coarsely grated
  • - 1/2 tsp kosher salt for draining zucchini
  • - 1 large egg
  • - 1/2 cup shredded cheddar cheese or Kefalotyri
  • - 1/4 cup grated Parmesan cheese
  • - 1/4 cup crumbled Greek feta cheese
  • - 1/2 cup Italian seasoned Panko breadcrumbs or almond flour for low-carb/keto
  • - 1/4 cup finely chopped fresh flat-leaf parsley
  • - 1 clove garlic minced
  • - 1/2 tsp onion powder
  • - 1/4 tsp black pepper
  • - 1 tbsp extra virgin olive oil for greasing pan

Method

  1. Preheat oven to 400°F (200°C). Generously grease a 24-count mini muffin pan with extra virgin olive oil or cooking spray.
  2. Grate zucchinis coarsely using a box grater. Place in a colander, toss with 1/2 tsp kosher salt, and rest for 10 minutes over the sink.
  3. Wrap grated zucchini tightly in a clean linen kitchen towel or cheesecloth. Squeeze firmly over the sink to remove all excess liquid until zucchini feels dry.
  4. In a large bowl, whisk the egg. Add squeezed dry zucchini, cheddar, Parmesan, feta, breadcrumbs (or almond flour), fresh parsley, garlic, onion powder, and black pepper. Stir well until uniformly combined.
  5. Spoon 1 tablespoon of mixture into each mini muffin cup. Press down firmly with the back of a spoon to pack ingredients tightly.
  6. Bake for 18 to 22 minutes until edges and tops are deep golden brown and crisp.
  7. Rest in pan for 5 minutes. Gently loosen edges with a butter knife and pop out. Serve warm with Greek tzatziki or garlic aioli.
