Baked Lobster Tails in Garlic Butter Sauce

Ingredients
  

For the Lobster:
  • - 4 large cold-water lobster tails 6-8 oz each, thawed if frozen
  • - 1 tbsp Extra Virgin Olive Oil
  • - 1/2 tsp sweet paprika
  • - 1/2 tsp sea salt
  • - 1/4 tsp freshly ground black pepper
For the Creamy Garlic Butter Sauce:
  • - 4 tbsp unsalted butter
  • - 4 cloves garlic finely minced
  • - 1/4 cup vegetable broth or seafood stock
  • - 1/2 cup heavy cream
  • - 1/4 cup plain Greek yogurt
  • - 1/4 cup grated Parmesan cheese
  • - 1 tbsp fresh lemon juice
  • - 1 tsp fresh lemon zest
For the Cheesy Topping & Garnish:
  • - 1 cup mozzarella cheese shredded
  • - 2 tbsp fresh parsley finely chopped

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the lobster tails using kitchen shears: cut down the top center shell to the base of the fin. Gently pry open the shell, lift the lobster meat to rest on top of the shell, and pat completely dry with paper towels.
  3. Arrange the butterflied lobster tails in a shallow ceramic baking dish. Drizzle the meat with olive oil and season evenly with sweet paprika, salt, and black pepper.
  4. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the vegetable broth and lemon juice to deglaze the pan. Lower the heat and whisk in the heavy cream, Greek yogurt, grated Parmesan, and lemon zest until smooth and slightly thickened.
  6. Pour the warm garlic cream sauce generously around and over the lobster tails in the baking dish. Top each tail evenly with shredded mozzarella cheese.
  7. Bake in the oven for 12 to 14 minutes until the lobster meat is opaque and reaches an internal temperature of 135°F-140°F.
  8. Switch the oven to the broiler setting for 1 to 2 minutes until the cheese is melted, bubbly, and golden brown.
  9. Remove from the oven, sprinkle immediately with fresh chopped parsley, and serve hot with lemon wedges.

Notes

- Make sure to pat the lobster meat completely dry before seasoning so the sauce clings properly.
- Use an instant-read meat thermometer to ensure lobster internal temperature does not exceed 140°F during baking to prevent rubbery meat.
