Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a baking dish with olive oil.
- Slice eggplants in half lengthwise. Score the flesh in a deep criss-cross diamond pattern without cutting through the skin.
- Brush both sides of eggplant halves with extra virgin olive oil. Season flesh with salt and pepper.
- Place flesh-side up on the baking sheet and roast for 20 to 25 minutes until tender.
- Remove from oven. Use the back of a spoon to gently press down the roasted center flesh, creating a shallow stuffing well.
- Fill wells with crumbled feta cheese, Kalamata olives, and minced garlic. Drizzle honey over the top and add fresh thyme sprigs.
- Return to oven and bake for another 12 to 15 minutes until feta turns golden-brown and honey bubbles.
- Cool for 2 minutes and serve warm.
