Ingredients
  

  • 1 lb Fresh Salmon cubed
  • 2 cups Sushi Rice cooked
  • 4 sheets Nori cut into 16 squares
  • 1 tbsp Extra Virgin Olive Oil
  • 2 tbsp Low-sodium Soy Sauce
  • 1 tbsp Honey
  • 1 clove Garlic minced
  • 1 tbsp Rice Vinegar
Toppings:
  • Avocado Cucumber, Spicy Mayo, Sesame Seeds, Green Onions

Method
 

  1. Prep: Preheat oven to 400°F (200°C). Grease a muffin tin.
  2. Marinate: Mix salmon with olive oil, soy sauce, honey, garlic, and onions.
  3. Assemble: Press nori squares into the tin. Add a spoonful of rice, then the salmon.
  4. Bake: Bake for 15-18 minutes. Broil for 1 min if desired.
  5. Garnish: Let rest, then top with avocado, cucumber, and sauce.

Notes

Ensure the sushi rice is fully cooled before assembly to maintain the "sticky" texture. For a 100% Mediterranean twist, serve with a side of Yogurt Cucumber Salad.
