- Preheat oven to 375°F (190°C).
- Pat salmon fillets dry with paper towels. Mix paprika, garlic powder, sea salt, and black pepper; rub seasoning blend evenly over all salmon fillets.
- Heat extra virgin olive oil in a skillet over medium-high heat. Sear salmon flesh-side down for 3-4 minutes until golden crust forms, flip and sear 1-2 minutes more. Transfer salmon to a plate.
- Reduce skillet heat to medium. Add minced garlic and chopped sun-dried tomatoes; cook for 1 minute until fragrant.
- Toss in fresh baby spinach; sauté for 1-2 minutes until wilted.
- Pour in broth, scraping up browned pan bits. Remove pan from heat for 1 minute, then gently whisk in room-temperature Greek yogurt and cheese until smooth.
- Transfer sauce into an oval ceramic baking dish. Nestled seared salmon fillets on top and spoon sauce over fish.
- Bake uncovered at 375°F (190°C) for 10-12 minutes until salmon flakes tender (internal temp 145°F / 63°C).
- Top with fresh lemon wheels and garnish with fresh chopped parsley and basil before serving.
