Baked Salmon with Spinach Sauce Recipe

Ingredients
  

  • - 4 salmon fillets 6 oz each
  • - 1 tbsp extra virgin olive oil
  • - 1 tsp paprika
  • - ½ tsp garlic powder
  • - ½ tsp sea salt
  • - ½ tsp freshly cracked black pepper
  • - 4 cloves garlic minced
  • - ½ cup sun-dried tomatoes in olive oil, drained and chopped
  • - 3 cups fresh baby spinach
  • - ½ cup low-sodium vegetable or chicken broth
  • - ½ cup full-fat plain Greek yogurt room temperature
  • - ½ cup grated Parmesan or crumbled feta cheese
  • - 1 lemon sliced into wheels
  • - 1 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pat salmon fillets dry with paper towels. Mix paprika, garlic powder, sea salt, and black pepper; rub seasoning blend evenly over all salmon fillets.
  3. Heat extra virgin olive oil in a skillet over medium-high heat. Sear salmon flesh-side down for 3-4 minutes until golden crust forms, flip and sear 1-2 minutes more. Transfer salmon to a plate.
  4. Reduce skillet heat to medium. Add minced garlic and chopped sun-dried tomatoes; cook for 1 minute until fragrant.
  5. Toss in fresh baby spinach; sauté for 1-2 minutes until wilted.
  6. Pour in broth, scraping up browned pan bits. Remove pan from heat for 1 minute, then gently whisk in room-temperature Greek yogurt and cheese until smooth.
  7. Transfer sauce into an oval ceramic baking dish. Nestled seared salmon fillets on top and spoon sauce over fish.
  8. Bake uncovered at 375°F (190°C) for 10-12 minutes until salmon flakes tender (internal temp 145°F / 63°C).
  9. Top with fresh lemon wheels and garnish with fresh chopped parsley and basil before serving.

- Use full-fat plain Greek yogurt at room temperature to keep the sauce smooth and velvety without heavy cream. - Ensure internal temperature of salmon reaches 145°F (63°C).
