Beef Stuffed Bread Roll Recipe

An easy, hearty, Mediterranean-inspired stuffed bread roll made with tender pizza dough, seasoned lean ground beef, colorful bell peppers, melted Cheddar, mozzarella, and smoked beef bacon. Baked until golden brown and sliced into thick, cheesy pinwheel spirals!

Ingredients
  

  • 1 lb refrigerated pizza dough or French bread dough brought to room temperature
  • 1 lb lean ground beef
  • 1 cup cooked smoked beef bacon crumbled
  • 1 small yellow onion thinly sliced into half-rings
  • 1 small orange or red bell pepper cut into thin strips
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 2 cups sharp Cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 egg
  • 1 tbsp water
  • Fresh parsley finely chopped, for garnish
  • 1 –2 tsp extra-virgin olive oil as needed

Method
 

Brown Beef:
  1. Heat skillet over medium-high heat. Add lean ground beef and cook until fully browned, breaking into small crumbles. Drain excess fat. Season with garlic powder, oregano, paprika, salt, and black pepper. Add sliced onions and bell peppers, sautéing for 3 minutes until slightly softened. Stir in crumbled smoked beef bacon and set aside to cool.
Roll Dough:
  1. Preheat oven to 400°F (200°C). Roll dough out on parchment paper into an even 12x16-inch rectangle.
Layer Fillings:
  1. Leave a 1-inch border around edges. Scatter half of the Cheddar and mozzarella across dough. Evenly spread cooled beef and vegetable mixture over cheese, then cover with remaining cheese.
Roll & Seal:
  1. Starting from long side, tightly roll dough into a log using parchment paper to assist. Tuck ends inward and pinch seams firmly to trap fillings. Place seam-side down on baking sheet.
Add Egg Wash & Vent:
  1. Cut 4–5 shallow diagonal slits across top. Whisk egg with water and brush generously over roll.
Bake:
  1. Bake at 400°F (200°C) for 20–25 minutes until crust is deeply golden brown and cheese bubbles out of vents.
Rest & Slice:
  1. Rest for 10 minutes before slicing with a serrated knife into thick spiral pinwheels. Garnish with fresh chopped parsley.

Notes

  • Make sure the beef filling cools down before placing it on raw pizza dough to prevent soggy dough.
  • Smoked beef bacon provides a great smoky depth while maintaining a pork-free recipe.
  • Use a serrated bread knife for neat pinwheel slices.
