- Heat 1 tbsp extra virgin olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic for 3-4 minutes until translucent.
- Add the ground beef and cook for 6-8 minutes, breaking up clumps, until fully browned. Drain excess fat.
- Stir in tomato paste, oregano, smoked paprika, ground cumin, salt, and black pepper. Simmer for 2 minutes, then remove from heat and let cool for 10 minutes.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Lay tortillas flat. Spread the cooled meat filling evenly across tortillas, leaving a 1-inch border along the edges. Top with mozzarella and crumbled feta.
- Roll tortillas tightly into logs. Place seam-side down on the baking sheet.
- Brush the tops generously with beaten egg wash.
- Bake for 20-25 minutes until deeply golden brown and crisp.
- Rest for 5 minutes, garnish with fresh parsley, slice into pinwheels, and serve warm with harissa chili oil.
Notes
* To make in an Air Fryer, cook at 375°F (190°C) for 8-12 minutes until crispy.
