Beetroot, Feta and Cucumber Salad

Ingredients
  

  • - 3 medium beetroots roasted, peeled, and cut into 1-inch cubes
  • - 1 large English cucumber sliced into thick half-moons
  • - 5.3 oz 150 g block feta cheese (cut into bite-sized cubes)
  • - ¼ cup fresh dill fronds roughly torn
  • - 3 tbsp extra-virgin olive oil
  • - 1 tbsp fresh lemon juice
  • - 1 small garlic clove finely grated
  • - Fine sea salt to taste
  • - Coarsely cracked black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Scrub beetroots clean, wrap each individually in aluminum foil, and roast on a baking sheet for 45–50 minutes until tender when pierced with a knife.
  2. Allow beetroots to cool, then rub away skins using a paper towel. Cut peeled beets into bite-sized 1-inch cubes.
  3. In a small bowl, whisk together extra-virgin olive oil, fresh lemon juice, grated garlic, salt, and black pepper until emulsified.
  4. Slice the English cucumber into thick half-moons and gently pat dry with paper towels if moist.
  5. In a large bowl, gently combine the cooled beetroot cubes and cucumber slices. Drizzle with the lemon dressing and toss gently to coat.
  6. Transfer dressed vegetables to a dark serving platter. Top with cubed feta cheese and torn fresh dill fronds. Finish with cracked black pepper and an extra light drizzle of olive oil.

Notes

- Keep feta as cubes on top rather than stirring heavily into beets to preserve clean color contrast.
- Roast beets ahead of time and store chilled to make assembly fast.
