Ingredients
  

  • Main Dip Base:
  • 8 oz Cream cheese 1 block, softened
  • 10 oz Rotel diced tomatoes and green chiles 1 can, slightly drained
  • 2 cups Sharp cheddar cheese freshly shredded
  • 1/2 cup Sour cream
  • 1/2 tsp Garlic powder
  • 1/4 tsp Chili powder
  • 1/4 tsp Smoked paprika
  • Optional Add-ins & Garnishes:
  • 1/2 lb Ground beef or sausage cooked and drained
  • 2 tbsp Green onions finely sliced for garnish

Method
 

  1. Melt the Base: Place a medium skillet or saucepan over medium-low heat. Add the softened cream cheese and sour cream, stirring frequently until melted and completely smooth.
  2. Add the Zest & Protein: Stir in the slightly drained can of Rotel tomatoes and green chiles. If you are adding cooked ground beef or sausage, fold it into the mixture now.
  3. Incorporate the Cheese: Reduce the burner heat to low. Add the garlic powder, chili powder, smoked paprika, and shredded sharp cheddar cheese to the pan.
  4. Melt and Smooth: Stir continuously for 3 to 5 minutes until the cheddar cheese is entirely melted and fully incorporated into a thick, uniform consistency.
  5. Garnish and Serve: Remove the skillet from the heat and transfer the mixture into a serving bowl. Garnish the top with sliced green onions and serve immediately alongside tortilla chips, crackers, or fresh veggies.

Notes

  • Crock Pot Method: To make this in a slow cooker instead, cube the cream cheese and place all ingredients (except the garnish) into the pot. Cover and cook on LOW for 2 hours, stirring occasionally until smooth, then switch to the WARM setting for serving.
  • Make Ahead: You can mix this dip up to 3 days in advance. Store it covered in the refrigerator and gently reheat it on the stovetop or microwave with a splash of milk if it needs thinning out.
