Method
Preheat Broiler:

Butterfly Lobster Tails:

Par-Broil Lobster:
- Broil tails for 4 to 5 minutes until shells turn bright red and meat begins turning opaque. Remove dish from oven.

- Heat 1 tbsp olive oil and 3 tbsp butter in small saucepan over medium heat. Sauté minced garlic 60 seconds until fragrant. Reduce heat, stir in evaporated milk and lemon juice, and simmer 2 minutes. Remove from heat and whisk in Greek yogurt until silky smooth.
Sauce and Add Cheese:
- Spoon warm garlic sauce over lobster tails, letting extra sauce pool in pan. Top tails evenly with Mozzarella and Parmesan cheese.
Final Broil:
- Return baking dish to broiler for 3 to 4 minutes until cheese is melted, bubbly, and spotted golden-brown.
Garnish and Serve:
- Sprinkle with chopped fresh parsley and serve immediately alongside fresh lemon wedges.
