Ingredients

For the Salmon:
  • - 4 center-cut salmon fillets 6 oz each, skin-on
  • - 1 tbsp extra virgin olive oil
  • - 1 tsp Kosher salt
  • - 1/2 tsp freshly ground black pepper
For the Avocado Gremolata Salad:
  • - 2 ripe avocados pitted and neatly diced
  • - 1 cup fresh Italian flat-leaf parsley finely chopped
  • - 1 tbsp fresh lemon zest from 1 large lemon
  • - 2 tbsp fresh lemon juice
  • - 2 cloves fresh garlic finely minced or grated
  • - 1 tbsp extra virgin olive oil
  • - 1/2 tsp Kosher salt
  • - 1/4 tsp freshly ground black pepper

Method

  1. Preheat your oven broiler on HIGH and set the top oven rack 5 to 6 inches below the heat source. Line a baking tray with aluminum foil or parchment paper.
  2. Pat the salmon fillets completely dry using paper towels. Brush the flesh side of each fillet with 1 tablespoon of extra virgin olive oil and season evenly with 1 teaspoon of Kosher salt and 1/2 teaspoon of black pepper.
  3. Place the salmon skin-side down on the lined baking tray. Broil for 7 to 9 minutes, until the top is golden brown and the salmon flakes easily with a fork (internal temperature of 145°F / 63°C).
  4. In a medium bowl, combine the diced avocados, chopped flat-leaf parsley, lemon zest, lemon juice, minced garlic, extra virgin olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Fold gently to combine without mashing the avocado.
  5. Transfer the warm salmon fillets to plates and spoon the fresh avocado gremolata salad generously over each piece. Serve immediately.

Notes

- To prepare up to 1 hour ahead, combine parsley, garlic, lemon zest, lemon juice, and olive oil in a bowl. Fold in the fresh diced avocado just before serving to maintain maximum freshness and bright green color.
