Method
- Preheat oven to 375°F (190°C).
- Hollow out and core bell peppers; arrange them upright in an 8x8-inch glass or ceramic baking dish.
- Heat extra virgin olive oil in a skillet over medium-high heat. Add ground beef and diced onion; cook 5–6 minutes until beef is browned. Drain excess fat.
- Stir in minced garlic, crushed tomatoes, Italian seasoning, garlic powder, salt, and black pepper. Simmer for 3 minutes.
- Remove skillet from heat. Fold in cooked quinoa and 1/2 cup of shredded cheese.
- Spoon meat and quinoa mixture tightly into bell peppers until filled to the top rim.
- Pour 3 tablespoons of water into bottom of baking dish.
- Cover tightly with aluminum foil and bake for 35 minutes until peppers are tender.
- Remove foil, sprinkle remaining 1/2 cup cheese over peppers, and bake uncovered for 8–10 minutes until cheese melts and turns golden brown.
- Garnish with fresh chopped parsley and rest 5 minutes before serving.

- Use freshly shredded cheese for the best melting texture.
- To make ground turkey version, simply swap lean beef with 1 lb ground turkey.
