Method
Brown the Meat:
- Preheat your oven to 375°F (190°C). Heat 1 tbsp extra virgin olive oil in a large skillet over medium-high heat. Add the ground beef and diced yellow onion, breaking up the meat with a wooden spoon as it cooks. Drain off any excess fat once fully browned.
Season the Filling:
- Stir the minced garlic, warm spice blend, salt, black pepper, and water into the skillet. Reduce heat to low and simmer for 3 to 5 minutes until the sauce reduces and evenly coats the meat. Remove from heat.
Prepare the Baking Dish:
- Spread about 1/2 cup of the red sauce evenly across the bottom of a 9x13-inch baking dish to prevent sticking.
Roll the Enchiladas:
- Spoon a generous portion of the seasoned ground beef down the center of each warm tortilla. Roll up tightly and place seam-side down in the prepared baking dish, packing them close together.
Sauce and Cheese:
- Pour the remaining 1 1/2 cups of red sauce evenly over the rolled tortillas, ensuring all edges are coated. Scatter the shredded mozzarella and crumbled feta evenly across the top.
Bake and Serve:
- Bake uncovered at 375°F (190°C) for 20 minutes until the sauce is bubbling at the edges and the cheese top is melted and speckled with golden brown spots. Garnish with chopped fresh cilantro or parsley. Let cool for 5 minutes before serving.
