Ingredients
Method
- Preheat oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with olive oil spray.
- Heat 1 tbsp extra virgin olive oil in a large skillet over medium-high heat. Add chopped yellow onion and cook 3-4 minutes until soft. Stir in minced garlic and cook for 1 minute until fragrant.
- Add ground beef to skillet. Cook for 6-8 minutes until completely browned, breaking up meat with a spoon. Drain excess grease.
- Stir in tomato sauce, dried oregano, sweet paprika, ground cumin, sea salt, and black pepper. Simmer gently for 3-5 minutes until sauce thickens around meat. Remove from heat and allow to cool for 5 minutes.
- Lay a flour tortilla flat. Place a sprinkle of mozzarella and feta in the center. Top with warm beef filling and another layer of cheese blend.
- Fold bottom edge of tortilla up over filling, fold left and right sides inward, then roll top edge down into a tight square parcel.
- Place pocket seam-side down in prepared baking dish. Repeat with remaining tortillas, fitting them tightly side-by-side.
- Brush tops generously with beaten egg wash.
- Bake at 400°F (200°C) for 20-25 minutes until golden-brown, crispy, and bubbling.
- Garnish with chopped fresh parsley and serve hot with Tzatziki or Greek salad.
