Cheesy Garlic Asparagus Chicken Casserole

Ingredients
  

For the Chicken & Asparagus:
  • - 4 large boneless skinless chicken breasts (pounded to an even thickness)
  • - 1 bunch fresh asparagus spears tough, woody ends trimmed off
  • - 1 tablespoon high-quality Extra Virgin Olive Oil EVOO
  • - 1 tsp garlic powder
  • - 1 tsp paprika
  • - 1 tsp dried oregano
  • - 1 tsp wild thyme
  • - 1 pinch dried rosemary
  • - Salt and freshly cracked black pepper to taste
For the Creamy Garlic Sauce:
  • - 1 tablespoon grass-fed butter
  • - 1 tablespoon Extra Virgin Olive Oil EVOO
  • - 4 cloves garlic finely minced
  • - 1/2 cup low-sodium chicken broth
  • - 3/4 cup whole milk or half-and-half mixed with 1 tsp cornstarch for thickness
  • - Zest and juice of 1/2 fresh lemon
  • - 1/4 cup Parmigiano-Reggiano cheese freshly grated
The Cheesy Topping & Garnish:
  • - 1.5 cups Mozzarella cheese shredded
  • - 2 tablespoons fresh flat-leaf parsley finely chopped

Method
 

PREP AND SEASON:
  1. Preheat your oven to 400°F (200°C). Lightly wipe a large, deep baking dish with extra virgin olive oil. Pat the chicken breasts thoroughly dry with paper towels. In a small bowl, combine the garlic powder, paprika, dried oregano, wild thyme, rosemary, salt, and pepper. Rub the chicken breasts evenly with 1 tablespoon of EVOO, then press the spice mix onto both sides.
SEAR THE CHICKEN:
  1. Heat a large skillet over medium-high heat. Add the seasoned chicken breasts and sear for 3 to 4 minutes per side until a beautiful golden-brown crust forms. Remove the chicken from the skillet and set aside on a plate (it will finish cooking completely in the oven).
BUILD THE CREAM SAUCE:
  1. Reduce the skillet heat to medium. Add the butter and remaining EVOO, scraping up any browned bits from the bottom of the pan. Add the minced garlic and sauté for 1 minute until highly fragrant. Pour in the chicken broth and the milk/cornstarch mixture, whisking constantly. Bring to a gentle simmer. Stir in the grated Parmigiano-Reggiano, lemon juice, and lemon zest. Whisk until smooth and slightly thickened.
ASSEMBLE AND BAKE:
  1. Arrange the trimmed fresh asparagus spears in a single even layer across the bottom of your prepared baking dish. Place the seared chicken breasts beautifully on top of the asparagus bed. Pour the warm garlic cream sauce evenly over the chicken and vegetables. Generously smother the top of each breast with the shredded mozzarella cheese.
BAKE TO GOLDEN perfection:
  1. Bake uncovered for 20 to 25 minutes until the cheese is bubbling and heavily blistered with golden-brown spots. Ensure a meat thermometer inserted into the center of the chicken reads 165°F (74°C).
REST AND GARNISH:
  1. Remove from the oven and let the casserole rest for 5 minutes to lock in the juices. Garnish with chopped fresh flat-leaf parsley before carving and serving hot.

Notes

- To keep the sauce completely glossy, white, and velvety without heavy cream, ensure you whisk the cornstarch into cold milk thoroughly before adding it to the warm skillet.
- Do not use frozen asparagus as it will release too much water and thin out the rich cream sauce base.
