Cheesy Garlic Bread Shrimp Grilled Cheese

Ingredients
  

For the Garlic Bread:
  • 4-8 thick slices sourdough or Italian bread
  • 1/2 cup unsalted butter softened
  • 3 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • 1/4 cup grated Parmesan optional
For the Filling:
  • 1 lb medium shrimp peeled/deveined
  • 2 cups shredded Mozzarella/Cheddar blend
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder
  • Salt & Pepper to taste
  • 1 tbsp Olive oil

Method
 

  1. Sauté Shrimp: Season shrimp with paprika, salt, pepper, and garlic powder. Sauté in olive oil for 2 mins per side. Add half the fresh garlic in the last 30 seconds. Set aside.
  2. Make Butter: Mix softened butter, remaining garlic, and parsley.
  3. Assemble: Butter the outside of each slice. Layer cheese, shrimp, and more cheese on the inside.
  4. Grill: Cook in a skillet over medium heat for 3-4 mins per side until golden.
  5. Serve: Let rest 1 minute, slice diagonally, and enjoy!

Notes

  • Shrimp Size: Medium (31-40 count) or Large (21-25 count) work best for even layering.
  • Bread Tip: If using sourdough, ensure it is sliced at least 3/4 inch thick to prevent the cheese from soaking through.
  • Make it Healthy: To reduce fat, use a thin brush of extra virgin olive oil on the outside of the bread instead of the garlic butter spread.
