Cheesy Garlic Shrimp Foil Pack Recipe

An easy 35-minute Mediterranean-style dinner featuring succulent shrimp, crisp summer vegetables, garlic olive oil sauce, and melted mozzarella-parmesan cheese cooked in foil pouches.

Ingredients
  

Shrimp & Veggies:
  • - 1 lb Large shrimp peeled and deveined, dried thoroughly
  • - 2 cups Fresh broccoli florets cut into bite-sized pieces
  • - 1 medium Zucchini sliced into half-moons
  • - 1 small Yellow squash sliced into half-moons
  • - 1 medium Red bell pepper seeded and diced
  • - 1/2 medium Red onion chopped
Garlic Olive Oil Sauce:
  • - 4 tbsp Extra virgin olive oil
  • - 1 tbsp Unsalted butter melted
  • - 4 cloves Garlic minced
  • - 1 tbsp Fresh lemon juice
  • - 1 tsp Italian seasoning or dried oregano
  • - 1/2 tsp Smoked paprika
  • - 1/2 tsp Sea salt
  • - 1/4 tsp Black pepper
Cheese & Garnish:
  • - 3/4 cup Shredded mozzarella cheese
  • - 1/4 cup Grated Parmesan cheese
  • - 2 tbsp Fresh flat-leaf parsley chopped
  • - 1 fresh Lemon cut into wedges

Method
 

  1. Preheat oven to 400°F (200°C) or preheat grill to medium-high heat.
  2. In a large bowl, whisk together extra virgin olive oil, melted butter, minced garlic, lemon juice, Italian seasoning, paprika, salt, and pepper.
  3. Add dried shrimp, broccoli, zucchini, yellow squash, bell pepper, and red onion to the bowl. Toss until evenly coated.
  4. Cut 4 large sheets of heavy-duty aluminum foil (12x12 inches). Lightly spray center with olive oil spray.
  5. Divide shrimp and vegetable mixture evenly among the 4 foil sheets.
  6. Top each portion with mixed mozzarella and Parmesan cheese.
  7. Fold top and bottom foil edges over ingredients and double-fold to seal. Fold sides tightly leaving steam space inside.
  8. Bake for 15-18 minutes until shrimp are opaque pink and veggies are tender.
  9. Optional: Carefully open top foil during last 2 minutes and broil for golden cheese.
  10. Garnish with chopped parsley and fresh lemon squeeze before serving.

Notes

- Pat shrimp thoroughly dry with paper towels to avoid excess liquid in packets.
- For a Greek variation, substitute feta cheese and Kalamata olives for the mozzarella.
