Cheesy Roasted Tomato Mozzarella Chicken

A quick 40-minute one-pan Mediterranean dinner featuring tender chicken breasts, sweet roasted cherry tomatoes, whole garlic cloves, melted mozzarella, and fresh basil.

Ingredients
  

For the Chicken & Marinade:
  • - 4 boneless skinless chicken breasts (pounded evenly)
  • - 2 tbsp Extra Virgin Olive Oil
  • - 1 tbsp balsamic vinegar
  • - 1 tsp Italian seasoning
  • - 1/2 tsp garlic powder
  • - 1/2 tsp sea salt
  • - 1/4 tsp freshly cracked black pepper
For the Baking Dish:
  • - 1.5 cups cherry or grape tomatoes left whole
  • - 8 whole garlic cloves peeled
  • - 1 tbsp Extra Virgin Olive Oil
  • - Pinch of salt and pepper
For the Cheesy Topping & Finish:
  • - 8 oz fresh mozzarella cheese thickly sliced
  • - 1/4 cup fresh basil leaves finely chopped
  • - 1 tbsp balsamic glaze optional drizzle

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a deep oval ceramic baking dish with olive oil.
  2. Pat chicken breasts dry. In a bowl, whisk together 2 tbsp olive oil, balsamic vinegar, Italian seasoning, garlic powder, salt, and black pepper. Coat chicken breasts thoroughly; marinate for 15 minutes.
  3. Place marinated chicken in a single layer in the middle of the baking dish.
  4. Scatter whole cherry tomatoes and peeled garlic cloves around the chicken. Drizzle tomatoes with 1 tbsp olive oil and season with a pinch of salt and pepper.
  5. Bake uncovered for 20 minutes until chicken reaches internal temperture of 160°F and tomatoes begin to burst.
  6. Remove from oven and top each chicken breast with thick slices of fresh mozzarella cheese.
  7. Switch oven to High Broil and return baking dish to oven for 3-5 minutes until cheese is melted, bubbly, and browned in spots.
  8. Let rest for 5 minutes. Garnish with chopped basil and a drizzle of balsamic glaze before serving.

Notes

- Pat fresh mozzarella dry before placing over chicken to avoid liquid pooling.
- Use a digital meat thermometer inserted into the thickest part of the breast to ensure an internal reading of 165°F after resting.
