Method
- Preheat oven to 400°F (200°C). Lightly grease a deep oval ceramic baking dish with olive oil.
- Pat chicken breasts dry. In a bowl, whisk together 2 tbsp olive oil, balsamic vinegar, Italian seasoning, garlic powder, salt, and black pepper. Coat chicken breasts thoroughly; marinate for 15 minutes.
- Place marinated chicken in a single layer in the middle of the baking dish.
- Scatter whole cherry tomatoes and peeled garlic cloves around the chicken. Drizzle tomatoes with 1 tbsp olive oil and season with a pinch of salt and pepper.
- Bake uncovered for 20 minutes until chicken reaches internal temperture of 160°F and tomatoes begin to burst.
- Remove from oven and top each chicken breast with thick slices of fresh mozzarella cheese.
- Switch oven to High Broil and return baking dish to oven for 3-5 minutes until cheese is melted, bubbly, and browned in spots.
- Let rest for 5 minutes. Garnish with chopped basil and a drizzle of balsamic glaze before serving.

- Pat fresh mozzarella dry before placing over chicken to avoid liquid pooling.
- Use a digital meat thermometer inserted into the thickest part of the breast to ensure an internal reading of 165°F after resting.
