Ingredients

For the Chicken:
  • 1.5 lbs Boneless Skinless Chicken Thighs sliced thin
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 tsp Cumin 1 tsp Coriander, 1 tsp Smoked Paprika
  • 1/2 tsp Turmeric 1/2 tsp Cinnamon
  • 1 tsp Garlic Powder
  • 1.5 tsp Salt & 1/2 tsp Black Pepper
For the Quick Garlic Sauce:
  • 1/2 cup Greek Yogurt
  • 1/4 cup Mayonnaise
  • 2 cloves Garlic finely minced
  • 1 tbsp Lemon Juice
For Assembly:
  • 4 Large Flatbreads Pita or Naan
  • 2 cups Shredded Lettuce
  • 2 Tomatoes diced
  • 1 Cucumber diced
  • 1/2 Red Onion thinly sliced

Method

  1. Marinate: Combine chicken, oil, lemon juice, and all spices in a bowl. Marinate for at least 2 hours.
  2. Cook: Heat a skillet over high heat. Add chicken strips in a single layer. Cook for 6-8 minutes until charred and cooked through (165 degrees Fahrenheit internal).
  3. Sauce: Whisk yogurt, mayo, garlic, and lemon juice.
  4. Assemble: Spread sauce on warm bread. Layer chicken and vegetables.
  5. Roll: Roll tightly and serve.

Notes

For the most authentic "rotisserie" texture, use a cast-iron skillet and do not overcrowd the pan. If you have time, marinate the chicken overnight to allow the lemon and spices to deeply tenderize the meat.
