Method
- Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish or prepare a large oven-safe skillet.
- Pat chicken breasts dry with paper towels. Season both sides evenly with Italian seasoning, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 3–4 minutes per side until golden brown. Transfer chicken to baking dish or plate.
- Reduce skillet heat to medium and melt butter. Add sliced cremini mushrooms and cook for 4–5 minutes until browned and moisture evaporates. Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and fresh lemon juice, scraping up browned pan bits with a wooden spoon.
- Stir in heavy cream, dried oregano, chopped baby spinach, and sun-dried tomatoes. Simmer gently for 2 minutes until spinach wilts.
- Whisk in freshly grated Parmesan cheese until melted and smooth.
- Pour sauce over chicken in baking dish or skillet. Top generously with shredded mozzarella cheese.
- Bake uncovered for 15–20 minutes until chicken internal temperature reaches 165°F (74°C). Broil for 2–3 minutes until cheese is bubbly and golden.
- Rest 5 minutes, garnish with fresh chopped parsley, and serve warm.
