Citrus Shrimp Ceviche Jar

A vibrant, portable, and incredibly fresh shrimp ceviche layered in mason jars. Using a quick poaching method, this recipe is safe, healthy, and packed with zesty citrus flavor and crisp Mediterranean vegetables.

Ingredients
  

  • 1 lb large shrimp peeled, deveined
  • 1/2 cup red onion finely diced
  • 1/2 cup mixed bell peppers red, orange, green, diced
  • 1/2 cup tomatoes seeded and diced
  • 1/4 cup fresh cilantro chopped
  • 2 green onions sliced
  • 1/2 cup fresh lime juice
  • 1/4 cup orange juice
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic minced
  • Salt & pepper to taste

Method
 

  1. Poach: Cook shrimp in boiling salted water for 2 mins. Move to ice bath. Dry thoroughly.
  2. Whisk: Combine lime juice, orange juice, olive oil, and garlic in a bowl.
  3. Mix: Toss shrimp and vegetables in the marinade.
  4. Layer: Spoon into mason jars.
  5. Chill: Refrigerate for 30 mins to 2 hours. Serve cold.

Notes

  • For the best texture, serve the same day.
  • Pairs perfectly with pita chips or sliced avocado.
  • Ensure shrimp are completely dry after the ice bath for the best flavor absorption.
