Soak Trahana:
- Cover trahana with 1 cup of cold stock for 15-20 mins.
Sauté:
- Heat oil, then sauté onion until soft (5 mins). Now, stir in tomato paste and oregano (1 min).
Simmer:
- Add remaining 5 cups of stock and bring to a boil.
Cook:
- Add the soaked trahana and reduce heat. Then, simmer for 20-30 mins, stirring frequently until creamy. Finally, add halloumi in the last 10 mins if using.
Serve:
- Season and garnish with olive oil/feta, and serve hot.
Notes
For a thinner soup, add more hot broth/water.
For the Sweet trahana soup recipe, swap sour trahana for sweet trahana and use water instead of stock, adding a little milk/sugar to taste.
