Ingredients
  

  • 2 large Sweet Potatoes
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Fresh Rosemary minced
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 cup Dried Cranberries
  • 1/4 cup Goat Cheese crumbled
  • 1/4 cup Toasted Walnuts crushed
  • 2 tbsp Honey for drizzling
  • Fresh Thyme for garnish

Method
 

  1. Prep: Preheat oven to 400°F (200°C). Grease a 12-slot muffin tin.
  2. Slice: Use a mandoline to slice sweet potatoes into 1-2mm rounds.
  3. Season: Toss slices in olive oil, rosemary, salt, and pepper.
  4. Roll: Overlap 12 slices in a line, roll tightly, and place in the muffin tin.
  5. Bake: Roast for 30-35 minutes.
  6. Top: Add cranberries, goat cheese, and walnuts to the centers.
  7. Finish: Bake 5 more mins. Drizzle with honey and garnish with fresh herbs.
