Ingredients
  

  • 16 oz 2 cups Cottage Cheese (4% milkfat recommended)
  • 2 cloves Garlic minced or grated
  • 2 tbsp Fresh Chives finely chopped
  • 1 tbsp Fresh Parsley chopped
  • 1 tsp Fresh Dill chopped
  • 1 tbsp Lemon Juice
  • 1 tsp Dijon Mustard
  • 1/2 tsp Black Pepper
  • 1 tbsp Extra Virgin Olive Oil for garnish

Method
 

  1. (Optional) For a smooth dip, place the cottage cheese in a food processor and blend until silky. For a rustic texture, leave it as is in a mixing bowl.
  2. Add the minced garlic, chives, parsley, dill, lemon juice, and mustard.
  3. Stir (or pulse) until well combined.
  4. Season with black pepper. Taste and add salt only if necessary.
  5. Transfer to a serving bowl, drizzle with olive oil, and top with extra herbs.
  6. Chill for 30 minutes before serving for maximum flavor development.

Notes

Pro Tip for Storage: If the dip separates slightly after sitting in the fridge, simply give it a quick stir. The lemon juice and salt can sometimes draw moisture out of the herbs, but a quick whisk brings it back to its creamy glory.
Herb Substitutions: If you can't find fresh herbs, use a 1:3 ratio for dried (1 tsp dried = 1 tbsp fresh). However, for the best "Mediterranean" flavor, fresh chives and dill are highly recommended.
Make it Spicy: Add a pinch of crushed red pepper flakes or a teaspoon of Aleppo pepper for a subtle, smoky heat that complements the garlic.
