Sauté Aromatics:
- Heat extra virgin olive oil in a large skillet over medium heat. Add chopped yellow onion and cook for 3 to 4 minutes until soft and translucent. Stir in minced garlic and cook for 1 minute until fragrant.
Season & Cook Chickpeas:
- Add drained chickpeas to skillet. Season with dried oregano, paprika, salt, and black pepper. Stir and cook for 3 minutes, allowing chickpeas to absorb seasonings.
Simmer:
- Pour in vegetable broth and fresh lemon juice. Bring to a gentle simmer for 3 minutes until liquid reduces by half.
Build Creamy Sauce:
- Remove skillet from heat completely. Whisk in plain Greek yogurt and grated lemon zest smoothly into warm pan until creamy.
Finish & Serve:
- Taste and adjust seasoning with extra lemon, salt, or pepper. Scatter crumbled feta cheese, red chili flakes, and fresh chopped parsley on top. Serve warm with pita or grains.
Notes
- To prevent Greek yogurt from curdling, always pull skillet off direct heat before whisking yogurt into warm pan.
- Mash a small handful of chickpeas against side of pan using a fork for an even thicker, velvety sauce consistency.
- Storage: Keep leftovers in airtight container in fridge for up to 4 days. Reheat gently over low stovetop heat.
