Creamy Tuscan Salmon Recipe

Ingredients
  

  • - 4 center-cut salmon fillets 6 oz each, skinless
  • - 1 tbsp extra virgin olive oil
  • - 1 tbsp unsalted butter
  • - 4 garlic cloves finely minced
  • - 1/2 cup oil-packed sun-dried tomatoes drained and chopped
  • - 3 cups fresh baby spinach
  • - 1 cup heavy cream
  • - 1/2 cup freshly grated Parmesan cheese
  • - 1 tsp Italian seasoning
  • - 1/2 tsp red pepper flakes
  • - Salt and freshly cracked black pepper to taste
  • - Fresh flat-leaf parsley chopped, for garnish

Method
 

  1. Pat the salmon fillets dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat 1 tbsp extra virgin olive oil in a large skillet over medium-high heat.
  3. Add salmon fillets to the skillet and sear for 4–5 minutes per side until golden brown. Transfer seared salmon to a plate.
  4. Reduce skillet heat to medium and add 1 tbsp butter. Once melted, add minced garlic and sauté for 1 minute until fragrant.
  5. Add chopped sun-dried tomatoes and sauté for 1–2 minutes.
  6. Toss in 3 cups fresh baby spinach and stir for 2 minutes until wilted.
  7. Lower heat to medium-low and pour in heavy cream. Stir in Italian seasoning and red pepper flakes, bringing to a light simmer.
  8. Whisk in freshly grated Parmesan cheese for 2–3 minutes until melted and sauce thickens slightly.
  9. Return salmon fillets to skillet, spooning cream sauce, spinach, and tomatoes over fillets. Simmer for 2–3 minutes until heated through. Garnish with fresh parsley and cracked black pepper.

Notes

- Mediterranean Diet Tip: For a lighter version while preserving visual appearance, replace half the heavy cream with evaporated milk or plain Greek yogurt stirred in off heat.
