Method
- Pat the salmon fillets dry with paper towels and season both sides generously with salt and black pepper.
- Heat 1 tbsp extra virgin olive oil in a large skillet over medium-high heat.
- Add salmon fillets to the skillet and sear for 4–5 minutes per side until golden brown. Transfer seared salmon to a plate.
- Reduce skillet heat to medium and add 1 tbsp butter. Once melted, add minced garlic and sauté for 1 minute until fragrant.
- Add chopped sun-dried tomatoes and sauté for 1–2 minutes.
- Toss in 3 cups fresh baby spinach and stir for 2 minutes until wilted.
- Lower heat to medium-low and pour in heavy cream. Stir in Italian seasoning and red pepper flakes, bringing to a light simmer.
- Whisk in freshly grated Parmesan cheese for 2–3 minutes until melted and sauce thickens slightly.
- Return salmon fillets to skillet, spooning cream sauce, spinach, and tomatoes over fillets. Simmer for 2–3 minutes until heated through. Garnish with fresh parsley and cracked black pepper.

- Mediterranean Diet Tip: For a lighter version while preserving visual appearance, replace half the heavy cream with evaporated milk or plain Greek yogurt stirred in off heat.
