Crispy Baked Zucchini Parmesan Boats

A lighter, Mediterranean-inspired twist on classic Parmesan bakes featuring tender zucchini halves coated in a crunchy Panko-Parmesan crust, layered with extra virgin olive oil marinara, and melted mozzarella cheese.

Ingredients
  

  • * 3 medium fresh green zucchinis halved lengthwise
  • * 1 tbsp extra virgin olive oil EVOO
  • * 2 large eggs beaten
  • * 3/4 cup Panko breadcrumbs
  • * 1/2 cup finely grated Parmesan cheese divided
  • * 1 tbsp Italian seasoning or dried oregano, basil, and parsley
  • * 1 tsp garlic powder
  • * 1 cup thick extra virgin olive oil marinara sauce
  • * 1 cup shredded mozzarella cheese
  • * 2 tbsp fresh flat-leaf parsley or basil chopped, for garnish
  • * Salt and black pepper to taste

Method
 

Prep the Zucchini:
  1. Pre-heat oven to 400°F (200°C) and line a baking sheet with parchment paper. Slice zucchinis in half lengthwise and gently scoop out watery seed centers with a spoon to form shallow boats. Pat completely dry with paper towels.
Oil & Egg Wash:
  1. Lightly brush each zucchini boat with extra virgin olive oil. Set up two shallow bowls: whisk eggs in the first bowl; combine Panko, 1/4 cup Parmesan, Italian seasoning, garlic powder, salt, and pepper in the second bowl.
Dredge & Coat:
  1. Dip each olive oil-brushed zucchini boat into the whisked egg wash, let excess drip off, then press firmly into the breadcrumb mixture until heavily coated on all sides.
Crisp-Bake:
  1. Arrange breaded zucchini skin-side down on the prepared baking sheet. Bake at 400°F (200°C) for 15 minutes until the breadcrumbs turn golden and crunchy.
Layer Toppings:
  1. Remove from oven. Spoon thick marinara sauce down the center of each boat, then top evenly with shredded mozzarella and the remaining 1/4 cup Parmesan cheese.
Melt & Broil:
  1. Return to the oven for 5 to 7 minutes (or switch to high broil for 2–3 minutes) until cheese is completely melted, bubbly, and lightly browned.
Garnish & Serve:
  1. Garnish with fresh chopped parsley and basil. Serve hot immediately.

Notes

* Salt Zucchini First: For maximum crunch, salt the scooped zucchini channels for 10 minutes and blot moisture away before breading.
* Reheating Tip: Reheat in an oven or air fryer at 350°F to retain the crispy crust structure.
