Crispy Caprese Chicken Cutlets (Mediterranean-Style)

Ingredients
  

For the Chicken Cutlets:
  • - 2 large chicken breasts sliced horizontally into 4 thin cutlets and pounded to 1/4-inch
  • - 1/2 cup all-purpose flour
  • - 2 large eggs thoroughly beaten
  • - 1 cup whole wheat Panko breadcrumbs
  • - 1/2 cup Parmesan cheese finely grated
  • - 1 tsp garlic powder
  • - 1 tsp coarse sea salt divided
  • - 1/2 tsp freshly cracked black pepper
  • - 1/4 cup extra virgin olive oil for shallow frying
For the Caprese Topping:
  • - 4 tbsp basil pesto homemade or olive-oil-based store-bought
  • - 8 thick slices fresh mozzarella cheese
  • - 1.5 cups cherry tomatoes halved
  • - 2 cloves garlic finely minced
  • - 1/4 cup fresh basil leaves chopped, plus whole leaves for garnish
  • - 2 tbsp balsamic glaze for drizzling
  • - 1 fresh lemon cut into wedges for serving

Method
 

Prep and Bread:
  1. Pound chicken cutlets between plastic wrap to a uniform 1/4-inch thickness. Season with salt and pepper. Set up three shallow bowls: Flour and garlic powder in the first; beaten eggs in the second; whole wheat Panko and grated Parmesan in the third. Dredge chicken in flour, dip in egg, then coat firmly in the cheesy breadcrumbs.
Fry Cutlets:
  1. Heat extra virgin olive oil in a large skillet over medium-high heat. Fry cutlets in batches for 3-4 minutes per side until deeply golden-brown and cooked through (165°F). Transfer to a wire cooling rack to stay crispy.
Blister Tomatoes:
  1. Wipe stray breadcrumbs from the skillet, leaving 1 tablespoon of oil behind. Turn heat to medium, add halved cherry tomatoes, and cook for 4-5 minutes until they burst and release juices. Add minced garlic and cook 1 minute more until fragrant.
Assemble and Melt:
  1. Place the crispy cutlets back into the skillet. Spread 1 tablespoon of pesto over each cutlet, top with 2 slices of fresh mozzarella, and spoon the warm tomatoes over and around the cheese layers. Cover with a lid for 2 minutes on low heat (or broil) until the mozzarella forms melted pools.
Garnish and Serve:
  1. Transfer to a shallow cream ceramic dish. Garnish generously with fresh chopped basil ribbons, an invisible squeeze of fresh lemon, and an elegant drizzle of balsamic glaze right before plating.

Chef's Note: Ensure the skillet is completely off direct high heat when melting the mozzarella to prevent the chicken crust underneath from scorching or becoming overly greasy from oil separation.
