Crispy Cheesy Zucchini Wrapped Shrimp Bites

Ingredients
  

Main:
  • 1/2 lb Large Shrimp peeled/deveined
  • 2 Medium Zucchini sliced into thin ribbons
  • 4 oz Mozzarella Cheese cut into small batons
Breading:
  • 1/2 cup All-purpose Flour
  • 2 Large Eggs beaten
  • 1 1/2 cups Panko Breadcrumbs
  • 1 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • Salt & Black Pepper to taste
  • Olive Oil for frying or spraying
Sauce:
  • 1/2 cup Greek Yogurt
  • 1 tbsp Lemon Juice
  • 1 clove Garlic minced
  • 1 tbsp Fresh Parsley chopped

Method
 

  1. Prep Zucchini: Slice zucchini into thin strips. Salt lightly, wait 5 mins, then pat very dry.
  2. Assemble: Wrap one shrimp and one piece of cheese in a zucchini ribbon. Secure with a toothpick.
  3. Bread: Dip in flour, then egg, then the seasoned panko mixture.
  4. Cook: Fry in olive oil for 3 mins per side until golden, or bake at 400°F for 15-20 mins.
  5. Serve: Serve hot with the whisked dipping sauce.

Notes

  • Mandoline Safety: Always use a guard when slicing zucchini into thin ribbons.
  • Cheese Substitution: If mozzarella isn't available, Halloumi or Kasseri provide an excellent salty Mediterranean alternative.
  • Make-Ahead: You can assemble the rolls and refrigerate them for up to 4 hours before breading and frying to save time during parties.
