Prep the Oven:

Make the Crust Mounds:
- In a bowl, combine shredded Parmigiano-Reggiano, Italian seasoning, and garlic powder. Drop the mixture into 24 small, even mounds on the parchment paper, spaced 2 inches apart. Flatten lightly with the back of a spoon into 2-inch circles.

- Bake for 6 to 8 minutes until golden-brown and bubbling around the edges. Remove from the oven and let cool for 2 minutes to set up into firm discs.
Assemble the Stack:
- Leave 12 crisps on the pan as bottom bases and reserve 12 crisps on a plate for top lids. On each bottom base, layer 1 slice of pepperoni, 1/2 teaspoon pizza sauce, a pinch of mozzarella, a second pepperoni slice, and top with a reserved parmesan lid.
Top and Melt:
- Crown each stack with a small dollop of sauce, a generous mound of remaining mozzarella cheese, and a light sprinkle of Italian seasoning.
Final Bake:
- Bake at 400°F (200°C) for 5 to 6 minutes until the top mozzarella layer is completely melted, golden, and bubbly.
Garnish & Serve:
- Let rest for 3 minutes, sprinkle with fresh chopped parsley, and serve warm!
