Crustless Zucchini Tart

A quick, 30-minute skillet Batzina featuring shredded zucchini, aged cheeses, and fresh aromatic herbs. Pan-seared in olive oil to create a golden, crispy crust without any pastry dough.

Ingredients
  

  • 3 medium zucchinis 1.5 lbs, coarsely grated
  • 3/4 tsp kosher salt divided
  • 2 large eggs lightly beaten
  • 1/2 cup Parmigiano-Reggiano or Pecorino Romano finely grated
  • 4 tbsp all-purpose flour or almond/chickpea flour
  • 2 cloves garlic minced
  • 2 tbsp fresh herbs dill, mint, or chives, chopped
  • 1/4 tsp freshly cracked black pepper
  • 3 tbsp extra virgin olive oil divided

Method
 

Draw Out Moisture:
  1. Place grated zucchini in a colander, toss with 1/2 tsp salt, and let sit for 10 minutes.
Squeeze Dry:
  1. Transfer zucchini into a clean kitchen towel or cheesecloth and squeeze out all excess liquid over the sink until completely dry.
Mix Batter:
  1. In a bowl, combine beaten eggs, garlic, grated cheese, flour, fresh herbs, remaining 1/4 tsp salt, and black pepper. Fold in squeezed zucchini until evenly coated.
Sear First Side:
  1. Heat 2 tbsp olive oil in a 10-inch skillet over medium-high heat. Add zucchini mixture and press evenly into a flat disk. Lower heat to medium and cook for 6–8 minutes until golden brown underneath.
Flip:
  1. Slide galette onto a flat plate. Invert skillet over plate, flip together safely, add remaining 1 tbsp olive oil to pan edges, and slide galette back in.
Finish & Serve:
  1. Cook second side for 5–6 minutes until crisp. Slice into wedges and serve hot.

Notes

  • Gluten-Free Variation: Substitute all-purpose flour with equal parts chickpea flour or almond flour.
  • Air Fryer Reheating: Warm refrigerated wedges at 350°F (175°C) for 3–4 minutes to regain maximum crunch.
