Method
Prepare the Yogurt Sauce:
- In a small bowl, whisk together the Greek yogurt, 1 tablespoon of lemon juice, minced garlic, chopped dill, and a pinch of salt. Set aside in the fridge so the flavors meld.
Mix the Filling:
- In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, red onion, chopped parsley, and chopped dill.
Dress the Salad:
- Drizzle the olive oil and 1 tablespoon of lemon juice over the chickpea mixture. Season with the oregano (or garlic powder), salt, and black pepper. Toss gently to combine.
Assemble:
- Gently open up each pita bread half to form a pocket. Spoon 1–2 tablespoons of the yogurt sauce inside each pocket to coat the inner walls. Stuff the pockets generously with the seasoned chickpea salad.
Garnish and Serve:
- Top each filled pita pocket with an extra dollop of yogurt sauce and garnish with a few fresh dill sprigs and parsley leaves. Serve immediately.
Notes
- Extra Crunch: If you prefer warm, crispy chickpeas, you can toss them with olive oil and spices and roast them on a baking sheet at 400°F (200°C) for 20 minutes before assembling.
- Add Feta: Crumbled feta cheese makes a fantastic addition to the filling if you enjoy a salty, savory kick.
