Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper and spray lightly with oil.
Heat 1 tbsp extra virgin olive oil in a skillet over medium heat. Sauté minced cremini mushrooms for 6 to 8 minutes until all liquid evaporates and they begin to brown.
Add diced onion, red bell pepper, and garlic to the skillet. Sauté for another 3 minutes until softened. Remove from heat and let cool.
In a large bowl, mix the flax egg ( ground flax + water) and let sit for 5 minutes.
Add the cooled mushroom mixture, ground walnuts, breadcrumbs, chopped parsley, EVOO, vegetable broth, Italian seasoning, salt, black pepper, and red pepper flakes. Mix until uniformly combined.
Shape the mixture into uniform 1.5-inch meatballs (approx. 16 portions).
Place on the baking sheet and bake for 22 to 25 minutes until firm and browned. Optional: Broil for the final 2 minutes for an extra golden crust.
Garnish with fresh chopped parsley and serve immediately with San Marzano marinara sauce.
