Golden flaky beef and cheese sliders baked with puff pastry and topped with fresh parsley.

Flaky Beef and Cheese Sliders

These Flaky Beef and Cheese Sliders are a sophisticated, Mediterranean-inspired twist on a classic crowd-pleaser. By using buttery puff pastry instead of heavy buns, these sliders achieve a shatteringly crisp texture that perfectly complements the savory roast beef and gooey melted cheese. Finished with a Mediterranean-style garlic butter and herb glaze, they are the perfect balance of indulgence and mindful ingredients.

Ingredients

  • 2 sheets Frozen Puff Pastry thawed but cold
  • 1/2 lb Lean Deli Roast Beef thinly sliced
  • 8 slices Provolone or Mozzarella Cheese
  • 2 tbsp Unsalted Butter melted
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Garlic Powder
  • 1 tbsp Worcestershire Sauce
  • 1/2 tsp Dried Oregano
  • 1 tbsp Fresh Parsley chopped, for garnish

Method

  1. Preheat oven to 400°F (200°C) and line a tray with parchment paper.
  2. Lay one sheet of puff pastry on the tray.
  3. Layer the roast beef evenly, then top with cheese slices.
  4. Cover with the second pastry sheet. Crimp edges with a fork to seal.
  5. Score the top into 12 squares using a sharp knife (cutting through the top layer only).
  6. Whisk butter, olive oil, garlic powder, Worcestershire, and oregano. Brush generously over the top.
  7. Bake for 15-20 minutes until deep golden brown and flaky.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Keep it Cold: Always work with puff pastry while it’s chilled. If it gets too soft during assembly, refrigerate the tray for 10 minutes before baking to ensure maximum flakiness.
  • Avoid Sogginess: Pat the deli roast beef dry with a paper towel before layering to remove excess moisture.
  • Serving Suggestion: Pair these with a fresh Greek salad or a light yogurt-based dip to keep the meal within Mediterranean diet principles.
  • Reheating: To maintain the "crunch," reheat leftovers in an oven or air fryer at 350°F for 5 minutes. Avoid the microwave as it will make the pastry chewy.
