Method
- Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish lightly with extra virgin olive oil.
- In a large bowl, combine the ground chicken blend, whole wheat breadcrumbs, plain Greek yogurt, 3/4 cup Parmigiano-Reggiano, eggs, minced garlic, shallots, parsley, oregano, olive oil, and seasonings. Mix gently with clean hands just until combined. Do not overmix.
- Divide the mixture into 6 equal portions and shape them into thick rectangular mini cutlets.
- Arrange the cutlets in the prepared baking dish with slight space between each portion.
- Bake uncovered for 28-30 minutes at 400°F (200°C).
- In a small bowl, whisk melted grass-fed butter, 1 tbsp olive oil, and garlic powder.
- Remove the pan from the oven, brush the tops with the garlic butter mix, and top each cutlet with shredded mozzarella and remaining Parmigiano-Reggiano.
- Switch the oven to Broil (High) and broil for 3 to 5 minutes until the cheese is bubbly, molten, and golden brown.
- Garnish with fresh parsley and let rest in the baking dish for 10 minutes before serving.
