Garlic Herb Chicken and Zucchini Skillet

Ingredients
  

  • - 1.5 lbs 680g boneless skinless chicken breasts, cut into 1-inch bite-sized cubes
  • - 2 medium zucchinis cut into 1/2-inch half-moons
  • - 1 medium yellow onion finely diced
  • - 2 medium Roma tomatoes seeded and diced
  • - 4 cloves garlic minced
  • - 2 tbsp extra virgin olive oil divided + 1 tsp for drizzling
  • - 1 tsp dried Italian seasoning
  • - 1/2 tsp onion powder
  • - 1/2 tsp garlic powder
  • - 1 tsp fresh lemon zest
  • - 1 tbsp fresh lemon juice
  • - 1/4 tsp crushed red pepper flakes optional
  • - 1/4 cup fresh Italian parsley and fresh basil chopped
  • - Salt and freshly cracked black pepper to taste

Method
 

  1. In a bowl, toss chicken cubes with garlic powder, onion powder, half of the Italian seasoning, salt, pepper, and 1 tsp extra virgin olive oil.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken in a single layer and sear for 5-6 minutes, turning occasionally until golden and cooked through (165°F / 74°C). Transfer chicken to a plate.
  3. Lower heat to medium. Add remaining olive oil to skillet along with diced yellow onion. Cook 3 minutes until soft. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add sliced zucchini and diced Roma tomatoes. Season with remaining Italian seasoning, red pepper flakes, salt, and pepper. Cook 4-5 minutes until zucchini is tender-crisp.
  5. Return cooked chicken and resting juices back to skillet. Toss together and simmer for 1-2 minutes until heated through.
  6. Remove from heat. Stir in lemon zest, fresh lemon juice, chopped parsley, and basil. Drizzle with remaining 1 tsp extra virgin olive oil before serving.

Notes

- Pat chicken thoroughly dry before seasoning for optimal browning.
- Cut zucchini into thick half-moons so it retains a nice bite without getting mushy.
- Serve plain for low-carb diets, or pair with farro, brown rice, or warm crusty whole-grain bread.
