Method
- In a bowl, toss chicken cubes with garlic powder, onion powder, half of the Italian seasoning, salt, pepper, and 1 tsp extra virgin olive oil.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken in a single layer and sear for 5-6 minutes, turning occasionally until golden and cooked through (165°F / 74°C). Transfer chicken to a plate.
- Lower heat to medium. Add remaining olive oil to skillet along with diced yellow onion. Cook 3 minutes until soft. Stir in minced garlic and cook for 1 minute until fragrant.
- Add sliced zucchini and diced Roma tomatoes. Season with remaining Italian seasoning, red pepper flakes, salt, and pepper. Cook 4-5 minutes until zucchini is tender-crisp.
- Return cooked chicken and resting juices back to skillet. Toss together and simmer for 1-2 minutes until heated through.
- Remove from heat. Stir in lemon zest, fresh lemon juice, chopped parsley, and basil. Drizzle with remaining 1 tsp extra virgin olive oil before serving.
Notes
- Pat chicken thoroughly dry before seasoning for optimal browning.
- Cut zucchini into thick half-moons so it retains a nice bite without getting mushy.
