Garlic Parmesan Baked Carrot Fries

These vibrant, crispy Garlic Parmesan Carrot Fries are a savory, nutrient-packed alternative to classic potato fries. Blasting them with cornstarch ensures a crispy exterior, while the combination of pungent garlic and sharp cheese creates a perfect savory contrast to the carrots' natural sweetness.

Ingredients

  • 1 lb large carrots peeled and sliced into uniform fry-shaped sticks (1/4-inch thick)
  • 1½ tbsp extra-virgin olive oil
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ⅓ cup finely grated Parmesan cheese divided
  • Salt and black pepper to taste
  • Fresh flat-leaf parsley finely chopped (for garnish)
  • Flaky sea salt for garnish

Method

Prep the Carrots & Oven:
  1. Preheat oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper. Thoroughly pat peeled carrot sticks dry with paper towels to eliminate moisture.
Dust with Cornstarch:
  1. Place carrots in a large mixing bowl. Sprinkle cornstarch over the carrots and toss until every stick is lightly and evenly coated.
Oil and Season:
  1. Drizzle olive oil over the dusted carrots, then add garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until seasonings form a light paste over the carrots.
Arrange on Sheet:
  1. Spread carrots in a single layer on the prepared baking sheet. Ensure fries do not overlap or crowd each other.
Bake & Add Cheese:
  1. Bake at 425°F for 15 minutes. Remove sheet, flip fries, and sprinkle 3/4 of the grated Parmesan cheese evenly over top. Return to oven for 10 to 12 minutes until edges are golden-brown and cheese is crisp.
Garnish & Serve:
  1. Transfer hot fries to a platter, dust with remaining Parmesan cheese, flaky sea salt, and fresh chopped parsley. Serve immediately with Greek Yogurt Garlic Aioli.
