Ingredients

  • 1.5 lbs Ground Chicken
  • 1 cup Breadcrumbs
  • 1/2 cup Grated Parmesan
  • 1 cup Shredded Mozzarella
  • 3 cloves Garlic minced,
  • 1 Egg
  • 1/4 cup Milk
  • 1 tbsp Italian Seasoning
  • 1/4 cup Fresh Parsley.

Method

  1. Preheat oven to 400°F.
  2. Whisk wet ingredients and spices.
  3. Fold in chicken, crumbs, and cheese.
  4. Shape into loaf.
  5. Bake 35-40 mins until 165°F.
  6. Rest 10 mins.

Notes

  • Moisture Tip: Always use a meat thermometer to pull the loaf at 165°F; chicken dries out quickly if overcooked even by 5 degrees.
  • Meal Prep: Slice the loaf after it has cooled completely for clean, perfect cuts that won't crumble.
  • Breadcrumb Hack: If the mixture feels too wet to shape into a loaf, let it sit for 5 minutes to allow the breadcrumbs to fully hydrate before adding more.
