Garlic Parmesan Roasted Potatoes

Halved baby Yukon Gold potatoes scored and baked face-down in a seasoned Extra Virgin Olive Oil and Parmigiano-Reggiano slurry to create an ultra-crispy, golden cheese crust. A healthy, flavor-packed Mediterranean side dish!

Ingredients
  

  • - 1.5 to 2 lbs baby Yukon Gold potatoes halved lengthwise
  • - 4 tbsp Extra Virgin Olive Oil divided: 1 tbsp for tossing, 3 tbsp for cheese slurry paste
  • - 1/2 cup Parmigiano-Reggiano cheese finely microplaned/powdery
  • - 1 tsp garlic powder divided: 1/2 tsp for tossing, 1/2 tsp for slurry
  • - 1/2 tsp dried oregano
  • - 1/2 tsp sweet paprika
  • - 1/2 tsp fine sea salt
  • - 1/4 tsp freshly cracked black pepper
  • - 2 tbsp fresh parsley finely chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and thoroughly dry the baby Yukon Gold potatoes. Slice each potato in half lengthwise.
  3. Using a sharp knife, gently score a light crosshatch diamond pattern (1/8-inch deep) on the cut flat surface of each potato half.
  4. In a large mixing bowl, toss the cut potatoes with 1 tablespoon of Extra Virgin Olive Oil, 1/2 tsp sea salt, 1/4 tsp black pepper, and 1/2 tsp garlic powder until thoroughly coated.
  5. In a small bowl, prepare the cheese slurry by combining 3 tablespoons of Extra Virgin Olive Oil, 1/2 cup microplaned Parmigiano-Reggiano cheese, 1/2 tsp garlic powder, 1/2 tsp dried oregano, and 1/2 tsp sweet paprika. Stir into a damp, thick paste.
  6. Spread the cheese slurry paste evenly over the bottom of a 9x13-inch baking dish or metal rimmed sheet pan.
  7. Press each potato half cut-side down firmly into the cheese slurry layer. Arrange tightly in a single layer.
  8. Bake at 400°F (200°C) for 30 to 35 minutes until the potatoes are tender when pierced with a fork and the cheese edges are deep golden brown.
  9. Remove from the oven and let rest in the pan undisturbed for 5 minutes to set the crispy crust.
  10. Use a thin spatula to flip or lift the potatoes, garnish with chopped fresh parsley, and serve hot.

Notes

- For maximum crunch, use real Parmigiano-Reggiano freshly grated with a microplane or fine powder grater rather than pre-shredded bagged cheese.
- Replace melted butter with 100% Extra Virgin Olive Oil for authentic Mediterranean flavor and beneficial fats.
