Garlic Roasted Cauliflower with Lemon Feta Sauce

Deeply caramelized garlic roasted cauliflower paired with a smooth whipped lemon feta sauce, fresh parsley, and lemon wedges. A fast, 30-minute Mediterranean side dish!

Ingredients
  

For the Cauliflower:
  • - 1 large head fresh cauliflower cut into flat-faced florets
  • - 3 tbsp extra virgin olive oil
  • - 1 tbsp fresh lemon juice
  • - 2 tbsp honey or date syrup
  • - 1 tsp smoked paprika
  • - 1/2 tsp garlic powder
  • - 1/2 tsp ground cumin
  • - Sea salt and freshly cracked black pepper to taste
For the Lemon Feta Sauce:
  • - 1/2 cup plain Greek yogurt
  • - 1/4 cup crumbled feta cheese
  • - 1-2 cloves fresh garlic finely minced
  • - 1 tbsp fresh lemon juice
  • - 1 tbsp extra virgin olive oil
  • - 1 pinch sea salt
For Garnish:
  • - 1/4 cup fresh flat-leaf parsley finely chopped
  • - Fresh lemon wedges for serving

Method
 

Preheat & Prepare:
  1. Preheat oven to 425°F (220°C). Line a large rimmed sheet pan with parchment paper.
Season Cauliflower:
  1. In a large bowl, whisk 3 tbsp olive oil, 1 tbsp lemon juice, honey (or date syrup), smoked paprika, garlic powder, cumin, salt, and pepper. Toss the cut cauliflower florets until thoroughly coated.
Arrange & Roast:
  1. Spread florets flat-side down on the baking sheet in a single layer with space between them. Roast for 25-30 minutes, flipping halfway, until golden-brown, charred, and crispy along the edges.
Prepare Sauce:
  1. While cauliflower roasts, combine Greek yogurt, crumbled feta, minced garlic, 1 tbsp lemon juice, 1 tbsp olive oil, and salt in a small bowl or food processor. Whisk or blend until silky smooth.
Assemble & Serve:
  1. Place hot roasted cauliflower into a shallow bowl. Drizzle generously with whipped lemon feta sauce, sprinkle with fresh parsley, and serve immediately with lemon wedges.

Notes

- Air Fryer Option: Cook seasoned florets at 400°F (200°C) for 12-15 minutes, shaking the basket halfway through.
- Make Ahead: The lemon feta sauce can be whipped up to 3 days in advance and kept refrigerated.
- Reheating: Re-crisp leftovers in a 375°F oven or air fryer for 5 minutes.
