Glossy Ginger Soy Cod Fillets

Flaky, tender wild cod fillets pan-seared in extra virgin olive oil and simmered in a shiny, sweet-savory ginger garlic glaze alongside crisp broccoli and sugar snap peas. A 20-minute, healthy Mediterranean-fusion meal!

Ingredients
  

For the Fish & Greens:
  • * 2 thick-cut wild cod fillets 6 oz each, fresh or fully thawed
  • * 1 tbsp Extra Virgin Olive Oil
  • * 1/4 tsp salt or to taste
  • * 1/4 tsp white pepper or ground black pepper
  • * 1 cup fresh broccoli florets
  • * 1 cup fresh sugar snap peas or snow peas
For the Ginger Garlic Sauce:
  • * 2 tbsp low-sodium tamari or low-sodium soy sauce
  • * 1 tbsp low-sodium oyster sauce
  • * 1 tbsp raw honey
  • * 1 tbsp fresh ginger peeled and cut into thin matchsticks
  • * 3 cloves fresh garlic finely minced
  • * 1 tsp toasted sesame oil
  • * 1/2 tsp chili flakes or chili-garlic paste
  • * 1/4 cup low-sodium vegetable broth or low-sodium chicken broth
For Garnish:
  • * 2 scallions green onions, thinly sliced
  • * 1 tsp toasted sesame seeds
  • * 2 fresh lemon slices

Method
 

Prepare the Glaze Sauce:
  1. In a small bowl or liquid measuring cup, whisk together the low-sodium tamari, low-sodium oyster sauce, raw honey, julienned fresh ginger, minced garlic, toasted sesame oil, chili flakes, and vegetable broth until the honey dissolves. Set aside.
Prepare the Fish:
  1. Pat the cod fillets completely dry on all sides using paper towels. Season both sides lightly with salt and white pepper.
Sear the Cod Fillets:
  1. Heat 1 tablespoon of Extra Virgin Olive Oil in a large heavy skillet (cast iron or stainless steel) over medium-high heat. Once the oil shimmers, lay the cod fillets gently in the pan. Sear undisturbed for 3 to 4 minutes until a crisp, golden crust forms on the bottom.
Flip and Add Greens:
  1. Carefully flip the cod fillets using a thin fish spatula. Immediately scatter the broccoli florets and sugar snap peas into the open spaces around the fish.
Add Sauce and Simmer:
  1. Pour the prepared ginger soy sauce over the vegetables and into the skillet. Reduce heat to medium, cover the pan with a tight-fitting lid, and steam-simmer for 3 to 4 minutes until the vegetables are crisp-tender and the fish is nearly cooked through.
Spoon Glaze and Finish:
  1. Remove the lid. Using a spoon, continually baste the top of the cod fillets with the bubbling pan glaze for 1 to 2 minutes as it reduces into a thick, glossy coat.
Plate and Serve:
  1. Transfer the glazed cod fillets and bright green vegetables to serving plates. Drizzle remaining sauce from the pan over the fillets. Garnish generously with sliced scallions, toasted sesame seeds, and fresh lemon slices. Serve immediately.

Notes

- Gluten-Free Option: Ensure your oyster sauce is certified gluten-free, or substitute with gluten-free hoisin sauce alongside gluten-free tamari.
- Spice Level: Adjust chili flakes from 1/4 tsp for mild to 1 tsp for a bolder spicy kick.
- Fish Selection: Thick center-cut loins cook much more evenly than thin tail pieces.
