Greek Chicken Burgers

Ingredients
  

For the Chicken Patties:
  • - 1 lb ground chicken 93% lean
  • - 1/4 cup feta cheese crumbled
  • - 1/4 cup red onion finely minced
  • - 2 cloves garlic minced
  • - 2 tbsp fresh mint or parsley finely chopped
  • - 1 tsp dried oregano
  • - 1 tsp fresh lemon zest
  • - 1/2 tsp sea salt
  • - 1/4 tsp cracked black pepper
  • - 1 tbsp extra virgin olive oil for pan cooking
For Burger Assembly:
  • - 4 brioche buns split and toasted
  • - 1/2 cup tzatziki sauce
  • - 4 leaves green leaf lettuce
  • - 1/2 English cucumber sliced into rounds
  • - 1 large tomato sliced into rounds
  • - 1/2 red onion sliced into rings
  • - 1/4 cup feta cheese crumbled, for topping
  • - 4 sprigs fresh dill

Method
 

MIX PATTIES:
  1. In a large bowl, gently combine ground chicken, minced red onion, minced garlic, chopped fresh herbs, dried oregano, lemon zest, salt, black pepper, and 1/4 cup crumbled feta cheese until just mixed.
SHAPE PATTIES:
  1. Divide mixture into 4 equal portions and shape into 3/4-inch thick patties. Press a light indentation into the center of each patty with your thumb.
COOK BURGERS:
  1. Heat 1 tbsp extra virgin olive oil in a cast-iron skillet or grill pan over medium-high heat. Cook patties for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a warm plate and rest 3 minutes.
TOAST BUNS:
  1. Place split brioche buns cut-side down into skillet pan juices for 1 minute until lightly toasted.
ASSEMBLE BURGERS:
  1. Spread 2 tbsp tzatziki sauce on bottom bun halves. Layer with lettuce, cucumber slices, tomato slices, and red onion rings. Place hot chicken patty on top.
GARNISH & SERVE:
  1. Top patty with remaining crumbled feta cheese and fresh dill sprigs. Cover with top bun and serve immediately.

Notes

- Do not overmix ground chicken to preserve tender texture.
- Substitute ground turkey 1:1 if desired.
- Make gluten-free by using gluten-free buns or serving in a lettuce wrap.
