MIX PATTIES:
- In a large bowl, gently combine ground chicken, minced red onion, minced garlic, chopped fresh herbs, dried oregano, lemon zest, salt, black pepper, and 1/4 cup crumbled feta cheese until just mixed.
SHAPE PATTIES:
- Divide mixture into 4 equal portions and shape into 3/4-inch thick patties. Press a light indentation into the center of each patty with your thumb.
COOK BURGERS:
- Heat 1 tbsp extra virgin olive oil in a cast-iron skillet or grill pan over medium-high heat. Cook patties for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a warm plate and rest 3 minutes.
TOAST BUNS:
- Place split brioche buns cut-side down into skillet pan juices for 1 minute until lightly toasted.
ASSEMBLE BURGERS:
- Spread 2 tbsp tzatziki sauce on bottom bun halves. Layer with lettuce, cucumber slices, tomato slices, and red onion rings. Place hot chicken patty on top.
GARNISH & SERVE:
- Top patty with remaining crumbled feta cheese and fresh dill sprigs. Cover with top bun and serve immediately.
Notes
- Do not overmix ground chicken to preserve tender texture.
- Substitute ground turkey 1:1 if desired.
