Ingredients

  • - 1.5 lbs chicken tenderloins or chicken breast cut into strips
  • - 2 tbsp extra virgin olive oil
  • - 1 tsp paprika
  • - 1 tsp garlic powder
  • - 1 tsp dried Greek oregano
  • - 1/2 tsp dried thyme
  • - 1/2 tsp onion powder
  • - 1/2 tsp salt
  • - 1/4 tsp black pepper
  • - 4 cloves fresh garlic finely minced
  • - 1 tbsp fresh lemon juice
  • - 1 tbsp unsalted butter
  • - 1/4 cup fresh flat-leaf parsley finely chopped

Method

  1. Pat chicken tenderloins thoroughly dry with paper towels.
  2. In a small bowl, mix paprika, garlic powder, oregano, thyme, onion powder, salt, and black pepper. Rub spices evenly over the chicken.
  3. Heat extra virgin olive oil in a skillet over medium-high heat. Add chicken tenders in a single layer and sear for 3–4 minutes per side until golden brown and cooked through. Remove chicken to a plate.
  4. Reduce skillet heat to low. Add minced garlic and sauté for 30–60 seconds. Deglaze pan with lemon juice and stir in unsalted butter until melted.
  5. Return chicken tenders to the pan, toss in sauce, garnish with chopped parsley, and serve immediately.
