Greek Chicken Wrap with Hummus

Ingredients
  

  • - 1 lb 450 g chicken breast, thinly sliced into strips
  • - 2 tbsp extra virgin olive oil
  • - 2 tsp dried oregano
  • - 1 tsp garlic powder
  • - ½ tsp paprika
  • - Salt and freshly cracked black pepper to taste
  • - 4 thick pita flatbreads or whole wheat wraps
  • - ½ cup classic hummus
  • - ½ cup feta cheese crumbled
  • - 1 cup cherry tomatoes halved
  • - 1 cup English cucumber sliced into half-moons
  • - ½ small red onion thinly sliced
  • - 1 cup baby spinach or arugula
  • - ½ cup fresh parsley finely chopped

Method
 

  1. In a bowl, toss sliced chicken breast with extra virgin olive oil, oregano, garlic powder, paprika, salt, and black pepper until fully coated.
  2. Heat a grill pan over medium-high heat. Cook chicken for 3 to 4 minutes per side (6–8 minutes total) until charred and cooked to an internal temperature of 165°F (74°C). Rest for 2 minutes.
  3. Warm pita flatbreads in a hot dry skillet for 30–60 seconds per side until soft and pliable with light grill marks.
  4. Lay flatbread flat. Spread 2 tablespoons of hummus evenly over the base to create a moisture barrier.
  5. Layer baby spinach, cucumber slices, cherry tomatoes, and red onion over the hummus base.
  6. Top with warm charred chicken strips, crumbled feta cheese, and chopped fresh parsley.
  7. Fold bottom edge up, roll tightly into a wrap, cut diagonally, and serve immediately.

Notes

- For meal prep, store cooked chicken and raw vegetables in separate glass containers for up to 4 days. Assemble fresh before eating.
