Ingredients

  • 8 oz Greek Feta in brine
  • 3/4 cup Greek Yogurt full fat
  • 2 cloves Garlic minced
  • 1 tbsp Lemon juice
  • 1/4 cup Extra virgin olive oil divided
  • 1 cup Cherry tomatoes halved
  • 2 Mini cucumbers sliced
  • 1/4 Red onion thinly sliced
  • 1/2 cup Kalamata olives
  • 2 tbsp Hot honey
  • 1/4 cup Crispy fried onions
  • Fresh Dill Parsley, and Mint for garnish
  • 1 tsp Dried oregano

Method

  1. Whip: Combine feta, yogurt, garlic, lemon juice, and 2 tbsp olive oil in a food processor. Blend until silky smooth.
  2. Plate: Spread the mixture onto a large board or platter, creating "swoops" with a spoon.
  3. Toppings: Layer the cucumbers, tomatoes, and red onions over the cheese. Add olives and any remaining feta crumbles.
  4. Drizzle: Generously pour the hot honey and remaining olive oil over the board.
  5. Crunch: Sprinkle the crispy fried onions and dried oregano over the top.
  6. Garnish: Finish with fresh herbs and serve with warm pita.

Notes

  • Pro Tip: For the fluffiest texture, ensure your Greek yogurt and feta are at room temperature before blending.
  • Make-Ahead: You can whip the feta 24 hours in advance, but do not add the hot honey or fried onions until the moment you serve to maintain the crunch.
