Green Chicken Quinoa Soup

Ingredients
  

Protein:
  • 2 cups cooked shredded chicken.
Grains:
  • 1/2 cup quinoa rinsed.
Veg:
  • 1 cup mushrooms
  • 1/2 cup peas
  • 1 onion
  • 3 cloves garlic.
Base:
  • 1 bunch cilantro
  • 1-2 jalapeños
  • 1 tbsp olive oil
  • 2 limes.
Broth:
  • 4-6 cups chicken stock.
Spices:
  • 1 tsp cumin
  • salt
  • pepper to taste.

Method
 

  1. Paste: Blend cilantro, jalapeños, and a splash of broth.
  2. Sauté: Cook onions, garlic, and mushrooms in olive oil until soft.
  3. Simmer: Add remaining broth, green paste, and quinoa. Simmer for 15-20 mins.
  4. Finish: Stir in chicken and peas for 3 mins.
  5. Serve: Add lime juice and seasonings. Enjoy!

Notes

For a deeper "Green" color, ensure you don't boil the soup too vigorously after adding the lime juice. If prepping for the week, keep extra broth on hand as quinoa tends to absorb liquid over time.
