Grilled Artichoke on Whipped Feta Cloud

Ingredients
  

Grilled Artichokes
  • 2 large globe artichokes or 1 can hearts
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 Lemon juiced
  • 2 cloves Garlic smashed
  • 3 sprigs Fresh Thyme
  • Salt & Pepper to taste
Whipped Feta Cloud
  • 150 g Feta cheese
  • 100 g Greek yogurt
  • 1 tbsp Olive oil
  • 1/2 Lemon zested and juiced
  • 1 clove Garlic minced
Toppings
  • 2 tbsp Toasted pine nuts
  • Fresh herbs dill/thyme
  • Extra Virgin Olive Oil for drizzling

Method
 

  1. Prep: Steam fresh artichokes for 15-20 mins until tender. If using canned, drain and dry.
  2. Marinate: Toss artichokes with oil, lemon, garlic, and thyme.
  3. Grill: Heat a grill pan to high. Grill artichokes for 3-4 mins per side until charred.
  4. Whip: Blend feta, yogurt, garlic, lemon, and oil in a food processor until silky.
  5. Plate: Spread the feta "cloud" on a plate with deep swirls. Top with artichokes, pine nuts, and herbs. Drizzle with oil and serve.
